Add "Plausible" as an analytics option

Plausible seems to be an open source self hosted software to do site analytics, it would be great to have as another option for 3.X and it this type of solutions are required if the wiki is internal and has confidential stuff.

Plausible would indeed be neat to have. GoatCounter would be a nice option to include too.
