I feel like it would useful to be able to export assets by themselves, and in bulk.  
My company has us creating a second wiki and wants us to migrate everything over.  Just don't have a good way to export the assets(media, Images etc.)
Would like to know if this would be achievable or not.

Why not just migrate the DB, which has all your assets? If not, then you should use the Local File System storage module and simply export and copy everything from there.

Why don't you do that on your server itself?

Just copy the asset folder to your new server.
