Any tips on how to invoke KaTex for inline formulae?
I see I can do something like this:

Agreed! Wiki.js is a great tool, and this is the one feature which is lacking for me in v2. I'm going to begin using Wiki.js before LaTeX support, but it may be a deal breaker for some academics/statisticians/data scientists.
When you guys decide to begin on this feature, please consider using KaTeX (https://katex.org/) over MathJax. There's an informative 8-month old HN thread here (https://news.ycombinator.com/item?id=19475273).
